Apricot and Walnut Muffins


Ingredients:

  • 2 C flour
  • 1 t baking soda
  • 1 C brown sugar
  • 1 t cinnamon
  • 1/2 C chopped dried apricots
  • 1/4 C water or orange juice
  • 100 g butter
  • 2 eggs
  • 1 C yoghurt
  • 1 large orange (rind + juice)
  • 1/2 C chopped walnuts

Instructions:

Mix dry ingredients in a large bowl. Microwave apricots with water for 1 min on high (all water should be absorbed). Add butter, eggs, yoghurt, grated rind and juice from orange up to 1/2 C. Add with the walnuts. Fold mixtures together, do not over mix. Bake at 190°C for 12-15 mins.
