Ingredients
- 2 C flour
- 2 teaspoons baking powder
- ¾ C sugar
- 75g butter
- 1 cup milk
- 1 egg
- grated rind of 1 large or 2 small lemons
- ¼ cup lemon juice
- ¼ cup sugar (for topping)
Instructions
Melt butter, add milk, egg, lemon rind & sugar. Beat with a fork.
Add wet ingredients to the mixed flour and baking powder. Don’t mix it too much.
Bake at 200 degrees for 15 mins.
Topping: Mix the sugar and lemon juice together and drizzle over muffins while hot. Leave to stand for 10 mins, then remove and serve (hot or cold).
