Kale, White Bean + Sausage Soup


Ingredients:

  • 3 onions, finely chopped
  • Large amount of kale (remove and finely chop centre stem, chop leaves)
  • 4 cloves garlic or 4t
  • 4 carrots, cubed
  • 3 cans cannellini beans, drained
  • 1t chili powder
  • Basil 1T or large bunch, chopped
  • Oregano 1T or large bunch, chopped
  • Parsley garnish
  • Sausage meat
  • 2 tin tomatoes
  • Tomato paste
  • 1 L vegetable stock
  • Parmesan few slivers + garnish
  • Salt
  • Pepper
  • ~1 cup water

Instructions:

Use a large stockpot, as this makes a lot of soup.

1. Saute onion in oil until soft, then add garlic. After 1 min add carrots + kale stems. Cook, stirring for 3-4 min.

2. Add sausage meat, stir until meat firms up and is in edible sized chunks.

3. Add tinned tomatoes + stock, parmesan slivers, basil + oregano, chili powder. Simmer for 15-20 min.

4. Add beans and kale leaves.

5. Add salt + pepper to taste, tomato paste.

6. Add water to desired consistency, more or less as needed.

Serves 6

Basically a meal in a bowl, no bread needed.
