Ingredients:
- 2½ C flour
- 1½ t baking powder
- ¼ t baking soda
- ½ t salt
- 225 grams butter
- 1½ C sugar
- 2 t vanilla
- 3 eggs
- ½ lemon juice
- Pinch of lemon zest
- 1 C milk
Instructions:
Preheat to 180°. Use glass pyrex.
Whisk together in a bowl: flour, baking powder, baking soda, and salt.
Beat/cream: butter and sugar.
Add gradually & beat: vanilla and eggs.
Add: lemon juice and zest.
Add, fold in with flour mixture: milk
Bake 30 mins, check center. Should be golden on top.
Cool in pan 15 mins, cool on rack. Chill.
Cut into cubes & ice with lemon icing:
2 C icing sugar, lemon juice, 1 t butter
