Spicy Pineapple Muffins (Alison Holst’s Marvellous Muffins)


Ingredients

  • 2 c flour
  • 1 T mixed spice (level)
  • 1 t baking soda
  • 1/2 c sugar
  • 1/4 t salt
  • 1 c sultanas
  • 100 g butter
  • 2 eggs
  • 450 g can crushed pineapple

Instructions

Sieve flour, mixed spice, baking soda, sugar and salt. Add sultanas and toss to combine.

Melt butter, add eggs, beat well. Drain pineapple (extract as much liquid as possible) – should have 1c fruit / 3/4c juice. Add to egg mixture. Pour over dry ingredients.

Fold together until flour is dampened and mixture looks lumpy and uneven.

Bake (medium sized) at 200°C for 10-15 minutes.
