Sweet Dumplings with Lemon


Ingredients:

  • 1 cup flour
  • 2 t baking powder
  • ¼ t salt
  • 25 g butter
  • about ½ cup milk
  • ½ cup sugar
  • 1 T golden syrup
  • 1 t grated lemon rind
  • ¼ cup lemon juice
  • 1 cup water

Method:

Sift flour, baking powder and salt into a mixing bowl. Cut butter though until crumb-like. Mix to a soft manageable dough with milk.

Divide mixture evenly into eight. Roll into balls.

Put the sugar, golden syrup, lemon rind, juice and water into a saucepan. Gently heat, stirring until sugar dissolves.

Bring to the boil. Add dumplings. Cover and simmer gently for about 20 minutes or until skewer comes out clean when tested.

Serve hot, with syrup poured over dumplings.
